Chomp it up.

A season for soup

I love a good chicken tortilla soup. So when I saw a recipe for chicken taco soup, I thought I’d probably like it, too. I didn’t have everything the recipe called for, so I sort of winged it. My version didn’t exactly scream “taco,” but it did taste good. It has a nice kick, making it a great welcome-to-fall soup.

The most amazing part? Poppy tried it! And she said she loved it! I don’t know that that’s true, though, seeing as all she did was lick the spoon four or five times. But still! She tried it! That’s a win in my book.

Chicken Taco Soup
1 can diced tomatoes w/green chilies
1 can whole-kernal corn
1 can tomato sauce
1 can chili beans (mild)
1lb chicken tenders
2tbl taco seasoning
4oz pepper jack cheese, shredded

optional:
sour cream
shredded cheese
tortilla chips

Pour tomatoes, corn, tomato sauce and chili beans into a slow cooker crock. Stir in taco seasoning. Add chicken, pushing it down to make sure it’s covered. Cook on low 4 and a half hours or so. Shred chicken, and stir in pepper jack cheese. Cook until cheese melts. Serve with sour cream, shredded cheese and tortilla chips.

Turns out, you can spell "cooking" without "f-u-n"

Menu Plan Monday logoI usually enjoy cooking, but I lost my kitchen mojo last week. It suddenly started to feel like a chore. I’m not sure what I need to do to make cooking enjoyable again, but I’m hoping I figure it out this week.

What do you do when the thrill is gone?

Monday: We have a meeting to go to right after Rockford gets out of work today, so we’ll probably be hitting a drive-through.

Tuesday: Parisienne Chicken from “Don’t Panic: Dinner’s in the Freezer.” (Although this particular dinner isn’t actually in the freezer.)

Wednesday: Chimichangas. This is the third week this has been on the menu. Maybe I’ll actually make it this week!

Thursday: Taco chicken soup

Friday: Pizza. I made my own pizza crust for the first time last week, and it came out really well! I’ll be trying it again this week.

I just noticed that this week’s Menu Plan Monday has a theme! I was supposed to share some of my family’s favorite recipes. The grown-ups around here love Rachael Ray’s Sloppy Joes, but the children would give you a different answer. There’s only one food that Pete doesn’t love (the avocado). And Poppy? She would eat peanut-butter-and-honey sandwiches at every meal if she had the option.

One thousand

This is the 1,000th post here at Butterscotch Sundae. That seems sort of monumental. I feel like I should make a list. If I made a list today, though, it would be something like The Top Ten Reasons I Wish I Hadn’t Left the Laundry Outside in the Rain Last Night or How to Go Through 1,000 Boxes of Kleenex in a Week or Poppy’s Top Five Ear Infections.

Last night after dinner, Poppy asked me to clean out her ear. By bedtime she was wailing. She spent the night curled up against me, occasionally waking up to cry and have me rub her head. A trip to the doctor confirmed it: Infections in both ears.

So rather than writing something exciting or fun, I give you this week’s menu. And in a few minutes, the pharmacy should have my girl’s prescription ready to go.
