What the family eats when I’m otherwise occupied

Way back in September, I went to the Type-A Mom Conference. And this week, I’m doing it again! Except that now it’s called the Type-A Parent Conference, and I’m hoping I don’t have another silly little panicking episode.

Anyway, I’m going, which means Rockford and the gang are partially fending for themselves this week. I was chatting with someone on Twitter last week about going to the conference, and she was in the process of making and freezing a bunch of food for her family. She is a good wife; I’m not doing that for Rockford. I have every confidence that he can handle it. Also, the dinners planned for the week are pretty simple.

Monday: Chile-Crusted Tofu with Southwestern Corn Pudding

Angela at Fluid Pudding has been dabbling in veganism recently, and I’m pretty sure that’s where I read about “The Veganomicon.” It sounded like an interesting cookbook, so I checked the library and lo and behold they had it. I told Rockford we were trying a vegan meal this week, and he thought I meant the taco pie we had last night. I don’t know much about vegan cooking, but I’m pretty sure ground beef, cheese and sour cream aren’t allowed. This one doesn’t include any of those items, but there seems to be a lot of effort required. So it needs to be wonderful

Tuesday: Fish sticks with mac ‘n’ cheese

I’m 99 percent sure Rockford will turn this into Fish Stick Po’ Boy night.

Wednesday: Grilled pork tenderloin

This meal voted Most Likely Not to Be Made.

Thursday: Butternut Squash Ravioli

With all of the thought I put into Poppy v. Vegetables, I can’t believe I always forget that she loves these.

Friday: Pizza
