Soup hits the spot

With the Christmas shopping mostly finished and Rockford’s payday at the end of the week, we’re offering a budget-friendly bunch of meals today. This menu plan was built from what we have on hand; this may be the first time I’ve managed to do that! We just started having wintry weather this weekend, so it was the perfect time to add some soup to the meal list, too.

Monday: Creamy potato soup
This recipe from Cook’s Illustrated is terrifically creamy and satisfying on a cold day.

Tuesday: Chicken enchiladas
Although it was a little mild for my taste, we enjoyed this recipe (from “Don’t Panic: Dinner’s in the Freezer“) the first time around. The foil and plastic wrap came off very easily, and the dish is thawing in the refrigerator now. It should make for a very simple dinner tomorrow night!

Wednesday: Tomato soup and grilled cheese
I’ve considered trying to snazz this duo up a bit by making cheesy croutons to top the soup. This time, though, I’ll probably stick with the sandwiches.

Thursday: Bean nachos

Friday: Pizza
Does anyone have a great, unusual pizza-topping combination they’d like to share? We’re in a pepperoni-and-pineapple rut.

  1. I don’t know if Poppy will go for it, but we like fresh basil leaves on ours. Some fresh tomato slices are a perfect compliment!

  2. How about some artichoke hearts and banana pepper rings? Obviously that be a big N-O for Poppy. There’s also something incredibly comforting about a plain ‘ole hamburger (or ground turkey) pizza. Kinda boring but it’s cheeseburger on crust. Yum, yum! A little onion, maybe some pepper… Okay, it’s obviously lunchtime, I’m hungry!

  3. In Sweden the sell pizza’s with chicken curry and banana’s…I can’t say i have ever requested that when at my sisters house though.

  4. I like Canadian bacon or ham with green peppers and onions on my pizza. My husband likes pepperoni and mushrooms.

  5. I love your idea for cheesy croutons. I recently ‘snazzed up’ my favorite meal of tomato soup and grilled cheese by buying a wheel of brie and some fancy crackers for the ‘grilled cheese’ portion of the meal. I warmed the brie up in the oven and it was heavenly!

    On the pizza toppings, I’m a big fan of spinach, sun dried tomatos and feta cheese.
