Lesson learned

The last time I made pizza dough, it came out rubbery. It baked up OK, but something obviously wasn’t right with the dough.

Today, I made some more dough. It’s soft and pillowy, and all is right with the world.

The difference? The flour I used last time expired in November. Of 2007.

  1. Hahaha! Anytime I bust out flour I make sure there aren’t bugs in it. But thanks to you I’ll be looking for bugs AND the expiration date!

    Do you like whole wheat? I love King Arthur flour. It’s a little more expensive but it’s totally worth it and their basic bread recipe on the side of the bag is my favorite.

  2. I do like whole wheat, and I’d been trying to incorporate it into the dough recipe. At first I thought that was the problem. But that was before I checked the expiration date on the all-purpose. 🙂
