Chomp it up.

What the family eats when I’m otherwise occupied

Way back in September, I went to the Type-A Mom Conference. And this week, I’m doing it again! Except that now it’s called the Type-A Parent Conference, and I’m hoping I don’t have another silly little panicking episode.

Anyway, I’m going, which means Rockford and the gang are partially fending for themselves this week. I was chatting with someone on Twitter last week about going to the conference, and she was in the process of making and freezing a bunch of food for her family. She is a good wife; I’m not doing that for Rockford. I have every confidence that he can handle it. Also, the dinners planned for the week are pretty simple.

Monday: Chile-Crusted Tofu with Southwestern Corn Pudding

Angela at Fluid Pudding has been dabbling in veganism recently, and I’m pretty sure that’s where I read about “The Veganomicon.” It sounded like an interesting cookbook, so I checked the library and lo and behold they had it. I told Rockford we were trying a vegan meal this week, and he thought I meant the taco pie we had last night. I don’t know much about vegan cooking, but I’m pretty sure ground beef, cheese and sour cream aren’t allowed. This one doesn’t include any of those items, but there seems to be a lot of effort required. So it needs to be wonderful

Tuesday: Fish sticks with mac ‘n’ cheese

I’m 99 percent sure Rockford will turn this into Fish Stick Po’ Boy night.

Wednesday: Grilled pork tenderloin

This meal voted Most Likely Not to Be Made.

Thursday: Butternut Squash Ravioli

With all of the thought I put into Poppy v. Vegetables, I can’t believe I always forget that she loves these.

Friday: Pizza

I’ll bet Horatio Caine makes an epic paella

We went to Krispy Kreme for doughnuts after Poppy’s soccer game on Saturday. I made my menu plan and grocery list there, on a napkin. And now I can’t find the napkin, and I can’t remember what the menu plan was. So now I’m going to have to recreate it using clues such as Things We Bought at the Grocery Store. I’m thinking of it as CSI: Kitchen. Except it’s not a crime scene, so the “joke” really doesn’t work at all unless we call it, say, “Cooking Stuff In: My Kitchen.” Works for me.

So. Here’s what I think we’ll do this week:

Monday: Sandwiches

I know that I had Jason’s Deli on the schedule again this week, but then I realized that I have all of the parts for My Sandwich* in my house. So it wouldn’t make sense to have Jason make it.
*California Club, no sprouts, no tomato
Menu Plan Monday

Tuesday: Spaghetti

I already had all of the spaghetti-making materials on hand. I don’t think this was on the menu I made on Saturday, but I know the kids will eat it. I also know I have garlic bread in the freezer.

Wednesday: Chicken sausages & sweet potato fries

I wish I could buy these sausages in bulk. They’re super tasty.

Thursday: Grilled chicken

The chicken is in the freezer, so this one hinges on me remembering to thaw it. Let’s just say there’s an 80% chance we’ll have chicken on Thursday.

Friday: Pizza

Monday: Grilled chicken tenders

Pete’s been asking for chicken for almost every meal lately. Maybe he’s not getting enough protein. Or maybe he just loves chicken.

Tuesday: Jason’s Deli

Free kids’ night! I don’t know what I’ll have, but I know it won’t be the Spicy Seafood Gumbo. I tried it last time, and it was not good.

Wednesday: Spaghetti

Possibly with meatballs. (But most likely not.)

Thursday: Eggs & veggie sausages

Have you tried Morningstar Farms veggie sausage links? You should. I don’t care for the texture of the patties so much, but the links are really good.
