- Monday: Leftovers
- We had ham and its various accompaniments yesterday. Tonight, we’ll have ham and its various accompaniments. I’m thinking, though, that I might have an omelet. Featuring ham. But probably without the accompaniments, because a potato salad omelet just sounds horrid.
- Tuesday: Tacos
- Or should I say tacos! My favorite!
- Wednesday: Grilled chicken
- Kalyn’s Kitchen has a great guide to grilling chicken that produces some mighty tasty poultry. I’m thinking about trying this BBQ Peanut Butter Chicken marinade. Poppy will eat grilled chicken about 70 percent of the time; I’m thinking the presence of peanut butter might boost the dish’s chances a bit. And if I don’t use the PB recipe, I might try this one for Southwestern Lime Chicken with Ancho Chili Sauce. It looks like it would make great — wait for it! — tacos.
- Thursday: Spaghetti and meatballs
- Poppy loves spaghetti, and Pete loves meatballs. And Rockford and I love both. So it’s a win-win-win-win situation!
- Friday: Pizza

Chomp it up.
I just realized we’re having sandwiches almost every night
- Monday: Jason’s Deli
- A Jason’s Deli opened near us not too long ago, and I learned last week that Monday is kids’ night. Which means free kids meals. So we’re going to give it a try.
- Tuesday: Hot ham & cheese sandwiches
- Poppy chose grilled cheese sandwiches for her kids’ choice pick. I didn’t think that would be sufficient for the grownups in the household, so I’ll be throwing some ham on our sandwiches.
- Wednesday: Grilled pork sliders
- I made these a few times last summer, and now I can’t find the recipe I used. If I still can’t find it by Wednesday, I’ll wing it.
- Thursday: Quiche
- I’m going out to dinner with a friend (yay!), so Rockford will be making a quiche. One of the pourable ones from the freezer section. They’re so easy, and they’re pretty tasty, too.
- Friday: Pizza
Trying out a new stir-fry shortcut
- Monday: Spicy orange pork stir-fry
- Our grocery store sells roasted pork tenderloins in the roasted chicken area. I wondered if I might be able to use cooked pork in a stir-fry. We’ll find out this evening.
- Tuesday: Thai curry chicken
- I made this last weekend for my mother-in-law’s birthday, and Rockford requested it again this week. It wasn’t spicy enough last week, so this week I’ll be using the whole can of masaman.
- Wednesday: Banh mi burgers
- My dad is visiting this week, and he really liked these when I made them in meatball form. The burgers are easier to assemble, though, so I’m hoping he likes them just as much that way.
- Thursday: Fish stick po’ boys
- Not gourmet, but definitely simple and tasty.
- Friday: Pizza
- I think we might order pizza this week. In fact, I’m 99.9% sure of it.
