Bakin' with bacon

It would seem that I’m not the first person to believe in bacon’s bakin’ potential. “Muffin” of Never Bashful with Butter tried her hand at the chocolate chip bacon cookie in December. Her verdict? Delicious.

Her addition of maple syrup to the mix is inspired, but I’m not sure about the idea of a glaze on a chocolate chip cookie. She also decorated the top of the cookie with a little piece of bacon — to warn potential eaters that there was bacon within, I think — but I didn’t find that visually appealing. I think bacon would be great inside a cookie, but I don’t want to see it on the cookie.

Finally, after months of putting this off, I made them. The verdict? Eh … not so good. I’ll definitely use maple syrup again, but the bacon component was sorely lacking. I used bacon bits rather than real bacon, and the texture didn’t work. Next time I’ll make some real bacon. It’ll need to be quite crispy, and it’ll need to be crumbled very, very small.

And yes, there will be a next time.
