A rather vague menu plan

menubuttonI spent most of Saturday working to cross an item of my Mighty List (more on that here), so Rockford* took charge of planning the menu and going to the grocery this week. He generally makes a very rough plan, and this week was no exception. Here’s his plan:

  • Tacos one night.
  • Fajitas, maybe.
  • Macaroni and cheese
  • Tortellini
  • Some kind of stir-fry
  • We’re having friends over for a birthday dinner on Wednesday, and the birthday girl requested something along the lines of a stroganoff or goulash. That will probably replace the fajitas.

    1. I have one of the best (in my opinion) stroganoff recipes in the world. it’s super easy, and pretty inexpensive. ๐Ÿ™‚ You always have great recipes, and probably have one already, but if not, this one is a winner every time!

      beef ๐Ÿ™‚ i get mine sliced at the meat market because i hate to cut up meat. It doesn’t matter how much you put, but I generally use 1 to 1 1/2 lbs.
      1 can condensed tomato soup… yep, campbells does the trick. don’t add water to it!
      1 can beef consomme — again, don’t add water!
      sliced mushrooms, i use one pack of the sliced ones from the produce section but have also used the ones in the jar… not as good, but are fine, especially if you haven’t had it with the fresh. ๐Ÿ™‚
      1/2 an onion chopped.
      1/8 tsp pepper
      1/4 tsp salt
      8 oz of sour cream

      I put my beef in a baggie and pour some flour in it to coat it, and shake it around. then i put it in a big skillet, one with pretty good sides on it, and brown it in butter with all the onions. when it browns, i pour in both cans of soup, mushrooms, salt and pepper. the important part is to let it simmer for 35 min. when that is finished, i stir in the sour cream and bring it back to temp. then i serve it over egg noodles or rotini or whatever. it is best on the egg noodles, however ๐Ÿ˜‰ if you use more beef, double the rest of the recipe or you won’t have enough sauce. good news is that you can even make it without sour cream or much beef and it’s still really good! i’ve even made it without beef and it was good ๐Ÿ™‚ if you make it, let me know if you think it’s as good as i do ๐Ÿ™‚ it’s Jason’s favorite… i may make it tonight ๐Ÿ™‚ have fun!!!
