What we’re eating this week

It’s Monday! That means we’re talking about food here at Butterscotch Sundae. Let’s be honest, though: Is there every a day when we aren’t talking about food here?

Monday: Bacon, lettuce and avocado sandwiches
Rockford might still be eating toast and soup, though.

Tuesday: Poppyseed chicken casserole
This is gentle enough that Rockford ought to be able to handle it. I hope so, anyway, because it’s one of his favorites.

Wednesday: Pizza?
I’m not in charge on Wednesday.

Thursday: Thanksgiving
I’ll be making green bean casserole, macaroni and cheese, cookie pudding and maybe an apple pie. I’m certain there will also be turkey.

Friday: Thanksgiving leftovers?
If there are leftovers, we shall eat them. If there aren’t? I’ll have to manufacture a plan.

A post-surgery menu plan

Rockford is saying goodbye to his gallbladder early tomorrow morning. He’s a little bit concerned that it’ll forever affect his ability to eat fatty and fried foods, so he spent the weekend eating cheeseburgers, pizza and fried chicken just in case. We’ve stocked up on brothy soups for him, but I’ve also planned a rather bland menu for the week just in case he’s up for something more than soup.

Monday: ??
We have a good deal of running around to do this evening, so I’m guessing we’ll be eating out.

Tuesday: Lucky Charms?
I’m not sure whether or not Rockford will want to eat anything, and I’m happy eating cereal for dinner. The kids might demand more, though. We’ll see.

Wednesday: Baked chicken and rice
I bought Shake and Bake.

Thursday: Breakfast for dinner
Hopefully egg white omelets are an acceptable thing for someone without a gallbladder, because that’s what we’re having.

Friday: Poppyseed chicken casserole
It’s innocuous and delicious!

From the family cookbook: Oreo dessert

My Aunt Judy brought her layered Oreo dessert to every family Christmas gathering, because she knew how much my stepsister and I loved it. The two of us would swarm her as soon as she came through the door, and the Oreo dessert was the first thing we piled onto our plates.

There’s nothing the least bit organic or farm-to-table in this recipe. That’s probably what makes it so tasty. I haven’t tried to make it since Aunt Judy passed away — I just don’t think it’ll be the same — but one of these days I will.

Aunt Judy’s Oreo Dessert

1/2 cup butter
large container Cool Whip
1/2 cup powdered sugar
1 package Oreos
8 ounces cream cheese
large package instant chocolate pudding

Layer 1: Crush cookies and mix with butter. Press into 9×13 pan and reserve a few crumbs for the top.

Layer 2: Mix 8oz cream cheese and 1/2 cup powdered sugar. Put in 1/2 of cool whip. Mix and spread over Layer 1.

Layer 3: Mix pudding according to box directions and spread over dessert. Let set for a few minutes.

Layer 4: Spread the rest of the cool whip on top and sprinkle with remaining Oreo crumbs. Refrigerate.
