How to make your own vanilla extract

Works-for-Me WednesdayI don’t remember where I first saw instructions for making vanilla extract, but it’s a safe bet that it was on the internet. I do know that I was shocked at how simple it is, and I may have kicked myself for spending so many years buying those tiny, pricey bottles of it at the store.

I don’t think you should kick yourself, but I do think you should think about making some vanilla extract. This really is way simple, and it makes a lovely and powerful extract.

Step One: Gather your supplies

  1. 3 vanilla beans per cup of vodka
  2. cheap vodka

The last time I made vanilla extract, I made it in the bottle the vodka came in. This time, though, I had a gallon jug that had previously held some fancy apple juice, and I thought it would make a nice container for a gigantic batch of vanilla. But that meant that I needed a lot of vanilla beans and vodka. My in-laws found a wholesale source for vanilla beans online and bought a very large number of them awhile back, so I didn’t have to buy beans for this project. I did have to buy vodka, though. I don’t drink,* and it felt very odd to go into the liquor store and ask where to find the cheapest vodka. And then to buy two giant bottles of it. The liquor store guy didn’t look at me in horror, though, so I guess he’s heard it all before.**

How to Make Vanilla Extract

Step Two: Prepare the vanilla beans
Using a sharp knife, split the beans open lengthwise. That is all.

Step Three: Combine
This is exceptionally easy if you’re using the vodka’s original bottle: Drop the beans into the vodka. If you’re using a different bottle, it’s only standard-issue simple. I dropped the vanilla beans into the bottle, then I used a funnel to pour in the vodka. If you’d like to ramp the difficulty up a notch, try to take a picture of yourself pouring it in. And then be happy with the one resulting picture that actually has the bottle in frame.

Step Three: Cap & Stow
Put the cap on, give it a shake or two it you’re feeling saucy, then put the bottle away in a cool, dark place and forget about it for a couple of months. I take the bottle out every now and then and give it a good shake, but I don’t know if that’s actually necessary. It does, however, make me feel like I’m contributing to the process.

*I don’t drink alcohol. I do drink other liquids, because I am not a robot.

**He did not, however, ask for my ID. It was the third time in a row that I wasn’t carded in a cardable situation, which leads me to the unavoidable conclusion that I am most assuredly Getting Old. And also Looking The Part, apparently.

Hard-boiled eggs and casseroles don’t mix

My dear friend Amy got me a subscription to Food Network magazine, and the latest issue grabbed Poppy’s attention. She was fascinated by the “Mix & Match Baked Pasta” feature, which is in the “Fun Cooking” section of the magazine. Well played, Food Network magazine. Anyway, I told her she could help with the mixing and matching, and we’d make it for dinner one night this week. She chose:

Fusilli + shredded chicken + hard-boiled eggs + artichoke hearts + a creamy sauce + mozzarella

The very idea of hard-boiled eggs in a baked pasta makes me gag a little, so I planned to leave that out. The rest of it sounded fine, though, so I put it on the menu. And I told her later that we’d be having it on Monday night. “Great!” she said. “I won’t eat it.”

Of course not.

We did reach an agreement, though. I’m going to make her a dish of just pasta and sauce, and I’m going to put some chicken on the side.

She’ll grow out of this someday. I was a picky kid, too — not as picky as some people, though — and I grew out of it. Eventually. When I was 20 or so.

Sigh.

Tuesday is usually kids’ choice night, but since Poppy chose something other than eggs or spaghetti this week I decided to have two kid nights. This is Pete’s choice. The meatballs are, anyway. I’ve never made polenta before. I’m counting on it to be awesome.

Wednesday: Dinner with friends

Thursday: Kung pao chicken

Thursday is supposed to be bean night, but this week it’s Rockford’s Choice night. And he picked kung pao chicken. I’ll be following the Cook’s Illustrated Kung pao shrimp recipe. The ingredient list is approximately two miles long, but it comes together easily and is delicious.

Friday: Pizza

Pondering in-store magazines, bread and beans

I had the opportunity to sit at Barnes & Noble by myself for an hour or so last week, and I spent most of that time reading magazines in the Starbucks cafe area. I hadn’t intended to buy a drink, but I felt guilty about taking up space there and reading a bunch of magazines that I wasn’t going to buy. So I had a caramel brulee latte, and it was great.

(I mention this because one of this week’s recipes is from a magazine I looked at that day.)

On the one hand, it isn’t a library. I always kind of feel like I should buy at least one magazine before perusing it. (I never actually do buy one, though. “Feeling” so rarely equals “doing” in my world.) On the other hand, they wouldn’t put the magazines right next to the cafe tables and so very far from the checkout if they didn’t expect people to sit down and read them. Right?

Anyway, here’s what we’re eating this week:

Monday: Eggs & veggie sausages

Tuesday: Spaghetti

The children will both eat all of their spaghetti if I make garlic bread and withhold it until they’ve cleaned their plates. Maybe I should make garlic bread with ever meal.

Wednesday: Hawaiian chicken

This is from the most recent issue of Cooking Light, which I did not buy when I was at Barnes & Noble.

Thursday: Bean & potato gratin

Thursdays are supposed to be Bittman Bean Night, according to my menu planning template. That hasn’t been happening with great regularity, though. This, however, is a Bittman bean recipe. So maybe this is the start of something.

Friday: Pizza

If all goes according to plan, we’ll be having dinner with my brother. He’s fallen deeply in love with the new Dominos pizza, so I’m guessing that’s what we’ll be having.
